Brandy Toffee Apples Recipe

We love a grown up twist on a classic recipe. There’s something fun yet nostalgic about it! This recipe from our friend Jemma Loi really does tick the box.

Makes 4 yum apples!⁠
 
INGREDIENTS:

4 small apples⁠
125ml double cream⁠
15g butter⁠
60ml golden syrup⁠
150g caster sugar⁠
40ml brandy⁠

METHOD:

1. Before you begin, line a tray with greaseproof paper. To remove any waxy coating from the apples, pour boiling water over them and dry with kitchen towel (the waxy coating will stop the caramel sticking) Thread each apple onto a lollipop stick, or if you are using twigs from outside, wash one end thoroughly and put a small square of greaseproof paper over it before piercing the apple.⁠

2. Pour all your ingredients into a saucepan and heat over a low heat until the sugar dissolves. Then turn the heat up to medium and boil until the temperature reaches 140 degrees on a sugar thermometer (or until the mixture turns a deep, rich, golden colour if you don’t have one) Don’t take your eye off it though, as it can very quickly burn.⁠

3. Carefully roll each apple round in the mixture ensuring they are fully coated and stand on the prepared tray to set for at least 30 minutes. The apples will keep for around 3 days, and taste super delicious whilst gathered round the fire 🥃🍎⁠
