Courgettes in a Lemon Butter Sauce

Do you ever feel like all you need is a big bowl of veggies and goodness? Well, this recipe will satisfy that craving but instead of a boring bowl of leafy greens this recipe is jam packed with flavour! Light, refreshing and ridiculously tasty, this simple recipe was created by Katie from The Humble Pescatarian blog. 

The idea behind our collaboration with Katie was to bring you a series of quick and easy recipes that evoke that warm and homely feeling, the types of recipes that warm your heart. This Courgette recipe does not disappoint!

Ingredients:

  • 2 courgettes
  • 70g edamame beans
  • 2 tbsp pomegranate seeds
  • 3 tbsp of a good salted butter
  • 1 tbsp crushed garlic
  • 2 tbsp fresh lemon juice
  • 1 tbsp grated lemon zest
  • A dash of olive oil

Method:

  1. Chop off the ends of your courgette and using a peeler, peel your courgette into strips (stop when you get to the pulp, you can use the pulp in sauces). 
  2. Melt your tbsp over a low heat with your olive oil, crushed garlic, lemon and zest until just melted and just warm. 
  3. Fold in your courgette strips, edamame beans and pomegranate seeds and serve with some vegetarian parmesan and enjoy.
