Day Twenty-Eight: Citrus Fennel & Courgette Spirals with Tofu

Why not mix things up this lunch time with this low-cal, low-carb dish? High in protein and full of goodness! To make this recipe you will need the Kiner Spiralizer Jar.

Ingredients:

  • 2 small fennel bulbs
  • 2 courgettes
  • 1 small red onion
  • 2 tsp sherry vinegar
  • 4 tbsp olive oil
  • Juice of half a lemon
  • Tofu
  • Chilli flakes to garnish

Method:

  1. Create spiral ribbons from the courgettes and use the Kilner® spiralizer to slice the fennel.
  2. You can build the salad in the jar or construct on a serving dish.
  3. Dice the red onion and tofu into cubes and add to the top of the salad.
  4. Combine the vinegar, olive oil and lemon juice in a separate bowl and mix thoroughly before dressing your salad.
