Spring summer is our favourite time of year here at Silver Mushroom (until it gets to cosy season, and we say that's our favourite time of year too). But we love it ever-so-much when the garden starts to bloom, the afternoons stretch a little longer, and the first outdoor tea parties of the season begin to take shape. And with British strawberries at their sweetest, what better way to bottle up the sunshine than with a homemade Strawberry & Prosecco Jam?
A sparkling twist on the classic, this strawberry and prosecco jam brings together everything we love about late spring and early summer; bright fruit, a little fizz, and the promise of slow, golden mornings. Whether spooned onto a warm scone, drizzled over porridge, or gifted to a neighbour just because, it’s a joyful little celebration of the in-between season.
Ingredients:
- 1kg fresh British strawberries, hulled
- 750g granulated sugar
- 2 tbsp lemon juice
- 150ml chilled prosecco
- (Optional: 1 knob of butter to reduce foam)

Prep your jars:
Sterilise your jars by washing them in hot soapy water, then popping them in a low oven (around 120°C) to dry. Lids can be simmered in hot water. -
Get fruity:
Pop your strawberries into a large pan and gently mash them with a potato masher – just enough to release those sweet juices but keep some texture. -
Sugar, lemon & sparkle:
Stir in the sugar and lemon juice. Place over a low heat and stir gently until the sugar dissolves completely. -
Boil & bubble:
Turn up the heat and bring the mixture to a rapid boil. Let it bubble away for 8–10 minutes, or until it reaches setting point (around 105°C on a sugar thermometer). If you don’t have one, try the wrinkle test: spoon a little jam onto a cold plate, wait a moment, and push it with your finger – if it wrinkles, it’s ready. -
Time to shine:
Once it hits setting point, take the jam off the heat and stir in the prosecco. Add a little knob of butter to stop any foam lingering on top. -
Jar it up:
Ladle the jam into your warm jars, seal with lids and turn upside down for 5 minutes to help create a vacuum seal. Let it cool before storing.
