3 Easy No Bake Tray Bakes

No bake tray bake with chocolate and buenos.

No bake tray bakes are the perfect thing to whip up quickly, easily and deliciously. Without worrying about preheating the oven, all you have to prep before is your tin. A 8” square baking tin is recommended for all of these no bake tray bakes. If you need a smaller one than what you have, you can reshape the tray with a foil wall. Line your tray with some greaseproof paper, and you’re set to ‘bake’. You don’t want to spend time making your sweet treat, to end up trying to scoop bits out of the tray with a spoon. Here’s some no bake tray bakes that almost anyone can make – we have every faith in you.

No Bake Millionaire’s Shortbread

The first traybake is a classic – a no bake millionaire’s shortbread. Chocolatey, caramely, and delicious. Your only challenge with the first of the no bake tray bakes is making sure you don’t burn the caramel, or the chocolate. That may or may not be said from experience. If you’re looking for gluten free tray bakes, these can easily be made with gluten free shortbread – shop bought or home-made.

Ingredients: 

  • 350g shortbread biscuits (Normal or gluten free)
  • 100g butter 
  • 1 tin of carnation caramel (397g)
  • 200g of milk chocolate 
  • 50g white chocolate

                      

How to Make your no bake Millionaire’s Shortbread: 

  1. Put the shortbread biscuits into a bowl or a zip lock back, and break up with a rolling pin until you have a fine crumb. Feel free to blitz in a blender too!
  2. Melt the butter in the microwave or on the hob, and mix with the biscuit crumb until fully combined. Pour the biscuit mix into the lined tin and spread across the tin, compacting them down. Transfer to the fridge to chill for 30 mins.
  3. Once chilled, bring the caramel to the simmer on a low heat in a small saucepan. Allow it to bubble for 5 minutes to thicken slightly. Keep an eye on your caramel to ensure it doesn’t burn on the bottom.
  4. Take the chilled biscuit base out of the fridge and pour the caramel over the top, using a small palette knife to completely cover the base. Chill it again in the fridge for at least 15 minutes. The longer you leave it, the less chance the caramel will mix with the chocolate too much!
  5. Melt each chocolate separately in the microwave or on the hob in a bowl over simmering water. Take the base out of the fridge and pour the milk chocolate over the caramel and spread to the edges.
  6. Drizzle the white chocolate over the top of the milk chocolate, then use the tip of a knife or a skewer to make a swirl effect with the chocolate. Ensure you only do this on surface level so keep from mixing the caramel and chocolate layers together.
  7. Pop the tray back in the fridge to chill until the chocolate has set completely. – overnight is the best! 
  8. Once set, use a knife to cut into pieces of your liking. Using a hot knife to cut without adding too much pressure will avoid the caramel leaking out! Simply hold the knife in some boiling water, then dry and cut! It takes some time but it’s worth it for a clean cut.

Kinder Rice Krispie Cakes

The next of our easy no bake tray bakes is another classic – Rice Krispie cakes, with a delicious hazelnutty addition.

Ingredients: 

  • 300g milk chocolate 
  • 150g Nutella or any hazelnut spread alternative
  • 200g Rice Krispies 
  • Mix of Kinder Buenos, Kinder Bars, and Happy Hippos

    

Method: 

  1. 1. Melt chocolate and Nutella in a bowl over a pan of simmering water. Once melted, stir in the Rice Krispies. 
  2. 2. Break up half of your Kinder treats into small pieces and mix into the Rice Krispie Mix. Try not to crush the bars too much, so that they still stand out in your Rice Krispie cakes. 
  3. 3. Transfer the mixture into a lined tray, and press down to level. 
  4. 4. Lay out the rest of your Kinder Bueno on top, however you like. When doing this, think about how you plan to cut the Rice Krispie cakes.
  5. 5. Chill in the fridge for at least 1 hour, or until the chocolate has hardened.
  6. 6. Finally, slice up, and enjoy your Rice Krispie cakes.

The beauty of no bake tray bakes is that you can pretty much make them however you like without the worry of ruining the bake. Customise them with all your favourite sweet treats, or perhaps your leftover Easter treats. Hence the name Easter Rocky Road. Between us, these treats are delicious no matter the time of year you make them.
