Day One: Banoffee Porridge

Porridge is a timeless breakfast and a splendid way to start the day. The whole grains in oats have been proven to boost bone mineral density, lower bloody pressure and promote healthy gut bacteria and reduce the risk of diabetes. Not to mention that porridge is delicious! However, nobody wants to eat a bland bowl of porridge every day, so we’re here to help you get a little more creative. Mix things up and give this Banoffee Porridge recipe a whirl!

If you’re short on time, this recipe can be made in advance and stored in the fridge until you are ready to grab and go. Makes enough to fill 3-4 Kilner Round 0.35 Litre Clip Top Jars.

Ingredients

  • 100g rolled oats
  • 450ml milk
  • 1 banana (sliced)
  • Toffee sauce
  • Pecan nuts

Method

  • Heat the milk gently in a pan and add the oats, simmer whilst stirring frequently for 5 minutes. If the porridge becomes too thick add a little more milk or water.
  • Toast the pecan nuts in a dry frying pan for a couple of minutes.
  • Add half of the sliced banana and a swirl of toffee sauce to the porridge and stir. Ladle into Kilner jars and top with more slices of banana, the toasted pecans, a swirl of toffee sauce and enjoy!
