Easy Protein Kilner Jar Breakfast

Breakfast is a big deal in our house. We may be controversial but some days we would rather go out for breakfast rather than out for dinner. I mean, it just doesn’t get any better than a runny yolk does it? 

If like us, you love breakfast but like to start the day off healthy then this recipe is for you. Created by the talented Katie from The Humble Pescatarian. It’s jam packed with flavour, super healthy and it literally takes less than 5 minutes to prepare… What’s not to love?

Ingredients

  • 1-2 hard soft boiled eggs ( 4-5 minutes for that soft middle)

  • 3 slices of vegan bacon (chopped)

  • Stale bread or baguette (copped into cubes)

  • A few slices of salmon

  • 4 Asparagus tips

  • 1 Spring Onion

  • Black Sesame Seeds

  • 1 small celery stick (chopped)

  • 1 half of an apple (cored & diced)

  • 1 tbsp Sriracha Mayo

  • Handful of Cress

Instructions

  1. In a pan of boiling water add in your egg and cook for 4-5 minutes until soft boiled

  2. Whilst your egg is cooking, in an oiled pan, pop in your bread (with another coating of olive oil), bacon pieces and asparagus and fry for 1-2 minutes, turning regularly until cooked and leave to the side

  3. Chop your spring onion, apple and celery and leave to the side.

  4. Remove your eggs and stun them in cold water for 10 seconds before peeling.

  5. Place your croutons and vegan bacon at the bottom of the jar followed by your diced apple, celery and spring onion and top with your salmon, eggs, asparagus and the rest of your bacon/croutons. Drizzle your mayo over the top and sprinkle your sesame seeds and cress and enjoy.
